    I just bought an ec-1000 second hand, and I was wondering if it would be safe to have the neck heel sanded down to how the new ec style neck heels are, or if I should just leave it thanks.

    I'd leave it as is. Even if you inspect the neck joint to see how far the neck tendon reaches into the body, you'll damage the resale value of the guitar. 

    Sell the guitar and buy one that has the heel you prefer.
